Fento Wines Bico do Cabo Albari*o 2025 is exactly the sort of white wine that makes us wonder why we don't drink more Albari*o. Produced in R*as Baixas in Galicia, north-western Spain, Bico do Cabo is made from 100% Albari*o by Fento Wines, the project associated with respected Galician winemaker Eulogio Pomares.
The 2025 comes from Val do Saln*s, the most Atlantic-influenced subzone of R*as Baixas, with vineyards planted on the region's characteristic decomposed granite soils. There's no oak and no malolactic fermentation here. Instead, the wine is fermented in stainless steel and spends around four months on its fine lees, adding texture while keeping the fruit, acidity and distinctly salty Atlantic character front and centre.
At 12.5% ABV, it's bright, crisp and dangerously easy to drink. Tasting Notes Colour: Pale straw yellow with subtle green highlights. Nose: Fresh and aromatic with green apple, pear, white peach and citrus, alongside fennel, fresh herbs and a distinctly mineral, sea-spray character. Palate: Crisp and energetic with lemon, apple and stone fruit driven by vibrant acidity.
Lees ageing gives the mid-palate a little extra texture before the wine moves into the salty, mineral character that makes good Albari*o so satisfying. Finish: Clean, persistent and mouth-watering, with lingering citrus, orchard fruit and a lovely saline edge.
